Chocolate Easter Cake Recipe

Easter is the perfect time of year to be a little indulgent. Treat yourself and your family with this delicious chocolate cake, topped with tasty chocolate frosting and your favourite Easter eggs… it’s sure to become a family tradition! 
 


INGREDIENTS

Cake Mix
  • 1/2 cup cocoa powder
  • 1/2 cup boiling water
  • 185 grams butter, softened
  • 1 1/2 cups firmly packed brown sugar
  • 3 eggs
  • 1 1/2 cup self-raising flour (sifted)
  • 1/2 cup plain flour (sifted)
  • 1/4 teaspoon bicarbonate of soda (sifted)
  • 3/4 cup (180ml) milk
  • 2 teaspoon vanilla extract 

Chocolate icing and topping
  • 400g milk chocolate
  • 2/3 cup thickened cream
  • Bag of Easter eggs, we like speckled eggs


METHOD

  • Preheat the oven to 160°C. Grease a 22cm round cake pan, and line the base with baking paper.
  • Start by combining the cocoa and water in a bowl, whisk until the mixture is cool and cool.
  • Using an electric mixer, beat the butter and sugar. Once they are light and fluffy, add the eggs one by one until combined. Remove from mixer and transfer to a large bowl.
  • Stir in the sifted self-raising and plain flour, then bicarb soda. Add milk, vanilla and cocoa to the mixture. Pour the mix into the prepared cake pan.
  • Bake for approximately 1 hour and 10 minutes, checking after 1 hour. The cake will be ready when you insert a skewer into the centre and it comes out clean. Once the cake is done, let it stand to cool slightly before turning onto a rack to cool completely. 
  • Make the frosting by carefully melting the chocolate with the cream in a small saucepan, being careful not to burn the chocolate. Store in the fridge to cool. When you are ready, cover the cake in the chocolate frosting, decorating the top with speckled eggs.
  • If speckled eggs are not available, use your favourite eggs… it will still be delicious!
