Juicy Pork Roast

This family-friendly meal is less than $20*, all it takes is some olive oil, salt, pepper, a little over an hour in the oven and you’ve got yourself a huge hit!
We love that this pork roast recipe is a “fancy without the fuss” meal that will please even the pickiest of eaters. The flavor palate is simple – back to the meat and 3 veg you grew up with. We believe this pork roast is naturally juicy enough however feel free to serve it up with a homemade gravy or mushroom sauce. 
 
If the crackling isn't as crispy as you'd like near the end of the roasting time, remove the potatoes and carrots from the pan and return the pork for another 10-15 mins on 200 degrees. Keep a close eye ensuring it doesn’t burn.

Ingredients 

  • 1-1.5kg pork roast  
  • 2 tbsp olive oil  
  • Salt & pepper 
  • 2 carrots  
  • 500g white potatoes  
  • 1 medium size sweet potato  
  • Sprig of rosemary  


Method 

  1. Preheat oven to 200 degrees celsius  
  2. Cut the vegetables for roasting  
  3. Prepare your pork roast by rubbing olive oil and salt into the already scored portions  
  4. Prepare the roasting tray with the vegetables, olive oil, salt and pepper. Lay down the rosemary and place the pork ontop. 
  5. Cook the pork in the oven for 30 mins until the the skin is golden brown. Remove from the oven and toss the vegetables around to ensure they are all evenly cooked 
  6. Place back in the oven for another 30-40 minutes on 180 degrees 
  7. Remove from the oven and let rest for 10 minutes. Cut open and enjoy!
