Green Beans with Caramelised Onions and Roasted Pine Nuts


The Christmas table wouldn’t be the same without a side of green beans. This recipe adds a little something special, with the sweet caramelised onions complementing the pine nuts.

Ingredients
(serves 10-14)
2kg green beans, ends trimmed
1 cup pine nuts
3 large onions, thinly sliced
2 tbsp extra-virgin olive oil
2 tbsp butter
Freshly ground black pepper
Sea salt
 
Method
• Add water to a saucepan, filling to 1.5 inches below the rim.
• Bring to the boil, adding half a teaspoon of sea salt and the beans.
• Cook for 6 minutes, or until just tender (the beans should still have some crunch).
• Drain the beans, running them under cold water to stop them cooking any further, then set them aside.
• Heat a skillet with a small splash of the olive oil, and roast the pine nuts, for roughly 5 minutes or until golden brown.
• Remove pine nuts and add the rest of the oil and butter to the skillet. When the butter has melted, add the onions. Stir frequently, for around 20 minutes over a medium-low heat or until the onions caramelise.
• Toss all ingredients together, season with salt and pepper and serve.
